Healthy Shrimp & Cucumber Rounds

 Ingredients 
 1/2 pound cooked shrimp, peeled,
 deveined & finely chopped
 1/2 cup homemade or organic
 mayonnaise
 2 green onions, thinly sliced
 1 celery rib, finely chopped
 1 teaspoon dill pickle relish
 Dash cayenne pepper
 1 medium English cucumber, cut into 1/4-inch slices

Instructions:

In a small bowl, combine the first six ingredients. Spoon
 onto cucumber slices. Serve immediately. Yield: 3 dozen.
 Great substitutions for mayonnaise, 1/4 cup mayo & 1/4 cup
 avocado or add jalapeños.

 Bacon Wrapped Dates
Bacon wrapped dates

What You'll Need 

1 lb organic turkey or pork bacon
 (nitrate and nitrite free)
 1 lb Medjool dates, pitted
 Wood toothpicks

Instructions:

1. Preheat oven to 350 degrees.
 2. Cut turkey bacon slices in half creating smaller pieces approximately 4 1/2 inches in length.
 3. Wrap dates with a half slice of turkey bacon. Slide a toothpick through the bacon and date to keep everything together.
 4. Place wrapped dates on a baking sheet covered with parchment paper or foil.
 5. Bake for 25-30 until bacon is slightly crispy. 6. Remove from oven and transfer to a serving platter.
